Bartender of the Month (June 2026)

I discovered my next Bartender of the Month during an extraordinary Pride Brunch hosted by the Krewe of Petronius, where Bill Ware showcased his talents as the bartender. This vibrant and energetic drag brunch is a testament to the demanding nature of bartending in such lively environments, where the combination of drinking and brunching creates a unique atmosphere. Bill relocated to New Orleans in 2020 amidst the pandemic to pursue graduate studies at UNO and has been serving at the Ruby Slipper on Metairie Road since 2022. Prior to his move, he honed his skills at the Red Rock Bar in Reno, Nevada.

Bill excels behind the bar, demonstrating professionalism, speed, and a personable demeanor that allows him to manage a bustling crowd of brunch patrons effortlessly. On that particular day, he presented a special champagne flight featuring four distinct varieties, highlighting the importance of drink presentation for many mixologists. 

Among his current favorites to craft is the Whipped Pineapple Mimosa at Ruby Slipper, which combines fresh pineapple puree, coconut milk, and sparkling wine, finished with French vanilla cold foam, evoking memories of Disneyland’s Tiki Room. While he generally prefers German and Czech beers when dining out, he has recently developed a taste for Sazeracs, particularly when he knows they are prepared well.

Bill considers his sense of humor and an espresso machine to be his greatest assets behind the bar, as crafting cocktails with fresh espresso adds a unique touch to the experience. He relishes the opportunity to meet a diverse array of people in his role as a bartender. During his tenure at McCormick and Schmick’s on Rodeo Drive in Beverly Hills, he had the pleasure of conversing with Joni Mitchell, discussing the music industry and her current favorite bands, which he found particularly enjoyable compared to his encounters with other celebrities. Bill appreciates the instant camaraderie that often develops among strangers at the bar, noting how even the most irritable customers can forge friendships.

He shares a common frustration, however, among bartenders: customers who argue when they are cut off, although he notes that such incidents are rare in early morning brunch settings. 

His eclectic background adds to his charm; he humorously recounts how he financed his first year of college by working as a phone psychic, and despite being offered a transition to phone sex, he chose to pursue bartending instead. His varied experiences also include roles as a theater director, university professor, and national park tour guide, showcasing his multifaceted talents. For a delightful cocktail experience, one should visit Metairie Road and enjoy a drink crafted by Bill.
