Bartender Spotlight

My travels along the Gulf Coast lead me to one of my favorite bars just outside New Orleans several times a year. SIPPS, in Gulfport, boasts some of the most attractive and skilled bartenders in the region, and my Bartender for November is one of them, the fabulous Dakota Goldman.

I had the pleasure of being served by Dakota, who, despite being relatively new to SIPPS, having worked there only since April, has seamlessly integrated himself into the team, giving the impression of having worked there for years. With prior experience at the Bourbon Pub & Parade and Good Friends in New Orleans, as well as various establishments in Chicago, Dakota brings a unique blend of Southern charm and sophisticated allure to the bar. His professionalism and efficiency have made him a favorite among both locals and visitors. 

Contrary to what one might expect at a small bar on the Mississippi Gulf Coast, SIPPS can get quite busy, especially on weekends and during special events. Dakota noted that the bar consistently handles a volume of patrons that rivals larger establishments, a testament to its popularity.

Dakota’s cocktails are expertly crafted and undeniably delicious. While he humbly claims not to be a mixologist, he does have a few signature drinks up his sleeve. He recalls being frequently asked for a fruity yet strong bourbon cocktail, which inspired him to create his own version of a “panty dropper.” This drink combines equal parts Captain Morgan, Malibu, and clear rum with pineapple juice, cranberry juice, grenadine, and a splash of Sprite, resulting in a vibrant pink concoction. “When in doubt, make it pink!” 

When enjoying cocktails at the bar, his usual choice is a neat shot of 1800 coconut accompanied by a bottle of water. On special occasions, he opts for a Ketel One gimlet served up. “My favorite drinks to prepare are espresso martinis and smoked Old Fashioneds, both of which are popular at Sipps,” he says. I can attest to their quality, having savored each multiple times; the espresso martinis, in particular, are exceptional. 

Dakota’s impressive skills, including his speed, charm, and adaptability, contribute to his success as a bartender. He notes that he wouldn’t be so successful, however, without the outstanding support he gets from the bar’s owners. He emphasizes that having dedicated owners like Jeffrey, Rebecca, and Ms. Judy, who prioritize the well-being of their staff as well as the success of the establishment, is a rare and invaluable advantage that enhances the overall experience behind the bar.

The importance of effective leadership in fostering employee satisfaction cannot be overstated, particularly in the hospitality sector, where high turnover rates are common. Many establishments, including bars, have faced challenges due to inadequate management, and so discovering a venue with minimal staff turnover is a rarity. Dakota expresses his appreciation for working at SIPPS, highlighting the exceptional ownership and the camaraderie he shares with talented coworkers like Kyle and Josh, from whom he continually learns. The supportive atmosphere is further enriched by regular patrons who treat the staff like family, making work enjoyable.

When asked what’s the most outrageous thing he’s seen while bartending at SIPPS, Dakota shared a humorous anecdote about the bar’s “fresh meat night,” an amateur strip competition held monthly, which certainly adds an element of excitement to the environment, but he demurred about going into details. One of his biggest frustrations? When customers attempt to gain his attention by snapping fingers or waving, emphasizing that patience is key in such interactions. Patience is not only a virtue but gets you in good with bartenders. 

When not behind the bar, Dakota has a passion for motorsports, particularly drag racing, which often leads to amusing misunderstandings with colleagues who initially think of RuPaul and drag queens. He is also an aviation enthusiast.

Dakota can typically be found behind the bar at SIPPS, located at 2218 25th Avenue in Gulfport, Mississippi, from Thursday to Saturday, operating from 4 PM daily.
